Following its success on the shores of Lake Nemi, L’Acqua Bulle has expanded to Grottaferrata, staying true to its core philosophy of celebrating local ingredients with a refined yet essential approach. Founded in 2021 by Lorenzo Giuliani and Claudia Maria Negru, the restaurant continues to showcase the flavors of the Castelli Romani region, blending traditional Italian cuisine with subtle French influences. The menu, offered both as a tasting and à la carte experience, highlights carefully selected local ingredients, including Vallericcia vegetables, Campagnano Romano meats, and Campoli Appennino mushrooms and truffles. Signature dishes feature the Poached Egg with Parmesan and black truffle, tagliolini with butter and truffle, and inventive combinations like linguine with prawns, mandarin, and bottarga.
The extensive wine list, curated by Daniele Pardi, boasts around 400 labels, with a focus on wines from Lazio, Italy, and France, providing a complete gastronomic experience. The restaurant’s new location, a charming vintage-style villa with a large communal table, perfectly reflects the authentic spirit of the establishment.
In addition to L’Acqua Bulle, the owners also launched Osteria Chiari in 2024, a project dedicated to Roman cuisine that centres on grilling and wood-fired oven dishes, located in Rome.
