Nicola Olivieri

Olivieri 1882’s iconic artisanal leavened creations are the hallmark of a brand that has evolved from a small family bakery into a renowned name in Italian and international pastry. At the heart of their Easter collection is the Colomba, a traditional Italian cake that symbolises the lightness and elegance of spring. Led by Nicola Olivieri, each Colomba is made with a live sourdough starter and undergoes a meticulous four-day natural leavening process. Rich in flavour yet incredibly light, it is enhanced by candied orange, Bourbon vanilla, flour, and butter. The traditional version is then covered in an almond glaze with crunchy sugar and whole almonds. Alongside the classic version, special editions include White Chocolate and Berries, Salted Caramel and Apricot, and even a Colomba Egg with strawberry and lemon notes.

Pasticceria Martesana presents its 2025 Easter collection, “Milano nel Cuore”, a tribute to the city of Milan and a homage to the legendary Vincenzo Santoro, founder of the historic pastry shop. This special edition reinterprets his iconic creations including the Pastiera Milanese, a reimagining of the classic Neapolitan dessert that uses saffron-infused mascarpone instead of Ricotta. Then there’s the traditional Colomba Milanese, which has been revisited with figs, rice, saffron, and walnuts. Finally, the Martesana Easter Egg is made with saffron threads infused into a white chocolate coating.
