The end of July saw the opening of NOTOS Rooftop, the second restaurant of Six Senses Rome, which has joined the BIVIUM Restaurant-Café-Bar on the ground floor of Palazzo Salviati Cesi Mellini. This historic palace has been hosting the first urban Six Senses property in Italy since March 2024.

NOTOS Rooftop will be open every evening from aperitif to midnight, featuring lounge music, live performances, or DJ sets. The lantern lights, the aromas of the rooftop herb garden, and an unforgettable view of the city will create a highly evocative atmosphere.

The menu, focused on seasonality and fresh ingredients, features the catch of the day and vegetable options that celebrate produce in various forms, reflecting the hotel’s commitment to sustainability: a delicious contemporary cuisine rooted in Mediterranean tradition.

The NOTOS Rooftop, including the restaurant area, will also be available for private events.
