A new chapter in Italy’s ongoing love affair with pizza begins this spring, as Bvlgari Hotels & Resorts partners with Seu Pizza Illuminati to launch Pizza Bar Pier Daniele Seu across its Italian properties—starting in Milan on 18 April, followed by Rome in May.
The collaboration builds on the duo’s success in Dubai, where the concept earned a place among Asia-Pacific’s best pizzerias, and signals a broader international rollout across the brand’s portfolio. At its core is chef Pier Daniele Seu’s distinctive approach to contemporary pizza: a 30-hour, slow-matured dough paired with carefully sourced Italian ingredients, resulting in combinations that are both refined and deeply expressive.
In Milan, the concept debuts during Milan Design Week within the garden gazebo of the Bvlgari Hotel, where rattan furnishings by Bonacina lend a relaxed, design-forward air. In Rome, the experience shifts to a rooftop terrace setting, with an open-air oven taking centre stage against the city’s dusk-lit skyline.
The menu spans eight pizzas, from elevated classics like Margherita DOP to more inventive compositions: zucchini variations, prawn crudo, and citrus-laced cheese, designed for sharing. A partnership with Bellavista further underscores the Italian focus, pairing sparkling wines with each course.
